2022 Viognier

Tasting Notes
Our viognier is pale gold in color with notes of mouthwatering green apple and pear on the nose, which transitions to a sweet-tart pineapple and guava.  This wine has a crisp, smooth mouthfeel with a creamy finish that makes it perfect to enjoy by itself or as an accompaniment to food.

Winemaking Style
After being hand-picked and sorted in the vineyard, the whole grape clusters go directly into the press. We taste the juice for quality during press fractions (being a winemaker is hard work!), which is then then transferred to neutral French oak and stainless steel barrels for fermentation; thus allowing us to create two unique flavor profiles. The wine is barrel-aged for 4 months on lees and stirred regularly to enhance the wine’s texture and mouthfeel.

2018 Cabernet Sauvignon

AVA: Calistoga, Napa Valley Vineyard: Poston Crest
Production: 273 cases ABV: 14.3%

Tasting Notes
Deep garnet in color with ruby hues, the nose has a subtle aroma of violet and cardamom.  Initial notes of bing cherry on the palette open to a deep raspberry and currant body with a hint of white pepper.  The tannins integrate to create a smooth, velvety mouthfeel with a long, delicate finish.

Winemaking Style
Grapes are harvested by hand early in the morning and taken to the winery for sorting and destemming before being transferred to an open top tank, where the fruit is cold soaked for 4 days.  During fermentation, we use a combination of punch-downs and pump-overs to deepen the color and enhance the tannins.  After macerating on skins for 24 days, the wine is aged in new and neutral French oak barrels for 28 months.
